Mocha Mousse

This is probably the best low carb dessert to have in your repertoire. Fast and simple with only a few ingredients, whip it up in no time, sure to impress.

Equipment required

1 electric whisk
3 medium mixing bowls
1 small deep base saucepan

Shopping list for 2-3 people

2 egg whites
1/3 cup whipping cream
50g 70% coco chocolate, check carb content mine was 30g/100g
1 level tsp of assugrin, taste mixture for sweetness if using a different sweetener
1/2 tsp instant coffee

Whipped cream for the top (optional)

Method to the madness

Break the chocolate into pieces in 1 of the mixing bowls, big enough to sit atop of the saucepan, add the instant coffee

Add some water into the pan and put it on a high heat, put the bowl with the chocolate on the saucepan, make sure the bowl isn’t touching the water

Heat the chocolate until it melts, remove from heat once melted

Meanwhile in the 2nd bowl whip 2 egg whites until they form stiff peaks

Whip the cream in the 3rd bowl with the sweetener

Once the choc has melted and cooled slightly fold it through the whipped cream until well mixed

Fold through the egg whites until well combined

Put the mixture into ramekins or glassware, cover with clingfilm and set in the fridge for 2 hrs minimum

Serve with some extra whipped cream for more indulgence. ENJOY!
