Beetroot & Beef Soup


Beetroot & Beef Soup

This dish is based on a starter I saw served on the television program Come Dine With Me. I had never had a beetroot soup and it intrigued me. The dish turned out really well. A hearty, low fat winter dish that warms and comforts.

Equipment required

1 hand blender, chopper attachment
1 grater
1 large non stick deep based saucepan
1 large non stick fry pan
1 mixing bowl

Shopping list for 4 people

500g pre cooked plain beetroot
1 onion
1 clove of crushed garlic
1 litre of beef stock
2 tsp of apple cider vinegar
Generous crack of black pepper

300g lean beef mince
Salt & pepper

Method to the madness

Mix a good pinch of salt and pepper into the mince, mix it thoroughly and form into small balls, set aside

Blend the onion until it’s in a fine dice

Turn the saucepan onto a medium heat and sweat off the onion and garlic for 2-3 minutes

Meanwhile grate the beetroot

Once the onions and garlic are cooked add the beetroot to the pan with the remaining soup ingredients

Turn the pan to high and bring the soup to the boil

Once boiling, turn the heat back down and leave it to simmer for 10 minutes

While the soup is simmering heat the fry pan to a high heat

Brown the meatballs, once browned turn the heat to medium and cook through, should take about 10 minutes

Serve the soup topped with the meatballs, you can add sour cream as well to garnish. ENJOY!
