Red Pepper & Feta ‘Wrap’

This is a super quick and simple breakfast or snack.

Equipment required

1 small non stick fry pan

Shopping list for 1 person

2 eggs
1/2 lrg roasted red pepper (pre made)
25g crumbled feta

Method to the madness

Whisk the eggs together, heat the fry pan to a high heat

Pour the eggs into the pan and spread until it covers the pan like a pancake

Once cooked, place the pepper and feta on one side of the pancake and wrap

ENJOY!
