Coconut Macaroons


Coconut Macaroons

Delish little bites of happiness for when you need a little sweet treat. These are really simple to make and only take 20 minutes start to finish.

Equipment required

1 lrg baking tray
1 sheet of baking paper
1 hand or electric whisk
1 mixing bowl

Shopping list makes approx 10

2 egg whites
3/4 cup of shredded coconut
1/2 tsp of vanilla extract or 1/4 of fresh vanilla pod
1 tsp of sweetener, I used assugrin, if you use a different sweetener taste for sweetness

Method to the madness

Preheat the oven to 190 degrees celsius

Line the baking tray with baking paper

Whisk the eggwhites with the sweetener until they form stiff peaks

Mix in the vanilla and coconut until well combined

Shape the macaroons into small balls about 1 tsp per macaroon

Place the macaroons on the baking paper evenly spaced apart

Put the macaroons into the oven and turn the oven down to 160 degrees

Bake the macaroons for about 15-20 minutes depending on what colour you like, I like mine a little more golden so head towards 20 mins, but I keep checking them
