Cinnamon Pikelet’s

Pikelet’s are an Aussie treat, for those of you who aren’t familiar with the term, they are just like a small fluffy pancake. This is a delish low carb, low fuss recipe a great breakfast, dessert, or snack. You can make these ahead of time and either re heat or have cool.

Equipment required

1 mixing bowl
1 non stick fry pan
1 whisk
1 sieve

Shopping list makes approx 12

1/4 cup coconut flour
1 tbsp of gluten free self raising flour
1/4 tsp of baking powder
Pinch of salt
1 tbsp of xylitol
1/3 tsp of ground cinnamon

2 lrg eggs
1/2 cup low fat milk

Butter

Method to the madness

Sift the flours and baking powder together into the mixing bowl

Add in the rest if the dry ingredients and combine

Add in the eggs and milk, whisk until there are no lumps

Heat the pan to a medium heat and add in some butter

Once the butter is bubbling scoop 1 tbsp of mixture into the pan, repeat leaving enough space to flip the pikelet’s

After a few mins the batter should be bubbling, flip the pikelet’s and cook until golden on the other side

Serve with your fav low carb toppings such as berries and cream, sugar free jam or just butter. ENJOY!
