Cheesy Peppers
This is a super quick and easy idea for a low carb vege snack I saw on a Jamie Oliver program. Ready in minutes and a tasty treat, these would be excellent on an antipasti or mezze platter.
Equipment required
1 small fry pan
Shopping list
Pre roasted whole small peppers
Mature cheddar
Olive oil
Method to the madness
Heat the pan to a medium high heat
Slice the cheddar into pieces that will fit easily into the pepper
Stuff the pepper with the cheese
Add a little olive oil to the pan and cook the peppers on both sides for a few mins until the cheese is gooey and melted
