Thai Corn Fritters


Thai Corn Fritters

These delightful morsels of goodness are the perfect snack, starter or side. Simple, quick and sooooooooo delish. If you are following a very low carb intake I wouldn’t recommend these are they are very moreish and you won’t be able to stop at one.

Equipment required

1 hand blender chopping attachment
1 mixing bowl
1 lrg fry pan

Shopping list makes approx 18 fritters

1/2 cup of pre cooked corn kernels
1/2 an onion
1 small red chilli de seeded
1 kaffir lime leaf
1/2 tsp of ground coriander
Generous pinch of salt
2 tbsp of gluten free self raising flour
1 medium egg
Vege oil

Method to the madness

Process the onion to a fine dice in the blender

Finely dice the red chilli, tear the kaffir leaf from it’s stem and finely slice the leaves

Put all the ingredients, except the oil, into a bowl and mix well

Heat the fry pan to a medium – high heat with a generous splash of vege oil

Once the oil is hot use a tsp to scoop the batter and drop into the pan

Cook the fritters for a few mins each side until they are golden

Serve with your fav Asian dipping sauces. ENJOY!
