Posh Cheesy Slaw

Coleslaw is one of my favourite sides. Not only because I’m addicted to mayonnaise, but also because it works well with so many things. You can’t have a BBQ chicken without coleslaw, can you? This recipe takes a little extra time to make the mayo, but you could just use the bought stuff and add in some extras. Refreshing but creamy all at once, with the addition of cheese you won’t be able to have just a little.

Equipment required

1 food processor shredding attachment (otherwise do it by hand with a sharp knife)
1 grater
1 small non stick fry pan
Small mixing bowl
Whisk

Shopping list for 2 people

1/2 fennel bulb
1/2 red onion
1 small white cabbage
1 carrot

100g manouri cheese

Mayo
1 egg yolk
1 tsp of Dijon mustard
Pinch of salt
Approx 1 tbsp of vege oil
Squeeze of lemon
Splash of balsamic vinegar

Method to the madness

Shred the fennel, onion and cabbage together, grate the carrot

Separate an egg yolk and add to the mixing bowl with the mustard, whisk until it thickens slightly and is creamy looking

Slowly add the oil in bit by bit whisking constantly, make sure to whisk the oil in completely before adding more to avoid it splitting. If you are using a food processor you can add a steady slow steam of oil while the machine is on

Add in a few splashes of balsamic vinegar and a small squeeze of lemon, taste for seasoning

Heat the fry pan to a high heat, slice the manouri cheese into bite sized pieces and fry until golden both sides

Mix the mayo through the veges and serve next to the fried cheese. ENJOY!
