Green Chicken Goodness

Well it doesn’t look the best in this pic, apologies, but trust me it was one delish dish. I wanted to have the flavour of curry without the heaviness. So, if you like green curry and you want to give something a little different a try, this is the right recipe for you.

Equipment required

1 small deep based saucepan
1 griddle pan or fry pan
1 hand blender, chopping attachment

Shopping list for 2 people

400g of chicken tenderloins

1 stalk of lemongrass, hard outside leaf removed
1/2 an onion
1 green chilli, de seeded if you like it mild
1 small bunch of fresh coriander
1 piece of stem ginger
Pinch of salt
1/2 lime juice
1 tsp of vege oil

200g of your fav non starchy greens, I used tenderstem broccoli and green beans

1 sachet of creamed coconut
2 tbsp of natural yoghurt
Squeeze of lime
Pinch of salt

Method to the madness

Blend the paste ingredients until you get a fine consistency

Marinate the tenderloins for 1 hr

Heat the fry pan or griddle to a high heat, sear the tenderloins, then reduce the heat to cook for a further 6-8 mins, remove once cooked

Meanwhile steam the veges of your choice

Turn the saucepan to a medium-low heat, add the coconut and let it melt, once melted turn off the heat, add the yoghurt and lime, taste for seasoning

Once the veges are cooked stir them into the sauce or plate them up and pour the sauce over the top. ENJOY!
