Nasi Goreng Stir-fry

Nasi Goreng is traditionally a fried rice dish from Indonesia. If you love the flavours then this low carb cheats recipe is for you.

Equipment required

1 lrg non stick fry pan or wok
1 small non stick fry pan

Shopping list for 2 people

2 lrg chicken breasts
2 eggs
1 small head of broccoli
1 red pepper
1 onion
1 fennel bulb
2 tbsp of Nasi Goreng paste
Splash of water

Method to the madness

Slice the chicken breast into thin strips

Chop the pepper into strips, the broccoli into florets, the fennel and onion into thin wedges

Heat the fry pan to a medium heat and add the chicken

Once the chicken has some colour add in the broccoli with a splash of water

Stir-fry the chicken and broccoli until the broccoli changes colour, then add the remaining veges and paste

Turn on the small pan to a medium high heat and cook 2 eggs to your liking

Once the veges are cooked to your liking, I like mine with some crunch, serve the dish topped with a sunny side up egg. ENJOY!
