Curried Wings

Chicken wings have always been a fav of mine. My mum makes a mean crunchy wing, that I have based this recipe on. Some people get grossed out by them, including my husband, more for me! This is a very simple recipe that can be knocked up in no time and will impress any wing lover. The wings have a great crunch but are still moist. Serve as a snack or with some sides as a main.

Equipment required

1 small fry pan
1 baking tray
1 sheet alfoil
1 small mixing bowl
Pair of tongs

Shopping list for 2 people as a main

500g of chicken wings
2 tbsp of corn flour
2 tbsp of mild curry powder
1/2 tsp of celery salt
1/2 tsp of onion powder
Pinch of salt
Vege oil to shallow fry

Method to the madness

Pre heat the oven to 200 degrees

Line your baking sheet with alfoil

In a mixing bowl combine the dry ingredients

Heat about 1cm of oil in the fry pan to a high heat

Take each chicken wing individually and coat it in the flour using the tongs, shake off the excess

Place the wings into the oil and cook for 2 mins each side, don’t overcrowd the pan, do it in batches

Once the wings have a nice crisp coating take them out and place on the baking tray

Once they have all been fried place the wings in the oven for 10-15 mins

Make sure you test one of the wings before turning off the oven, they could need longer

Serve with a natural yoghurt dipping sauce or with your fav low carb sides. I served mine with coleslaw. ENJOY!
