The amount of net carbs people eat per day on a low carb diet is extremely variable. It can range from as little as 20g to as much as 100g. This recipe is suitable for any carb intake, as long as you eat it in moderation accordingly. Perfect for when you are running low on time, it can be prepared ahead of time and kept in an air tight container. If your carb intake is at the higher end you can add dried or fresh fruit once it’s ready.
1 lrg baking tray
1 sheet of alfoil or baking paper
2 cups of pure oats (gluten free oats)
1/2 cup of shredded coconut
1/4 cup of flaked almonds
1 tsp of ground nutmeg and cinnamon
1 tsp of vege oil
1 drizzle of runny honey
Method to the madness
Preheat the grill to its hottest setting
Place all the dry ingredients on a lined baking tray, drizzle with the oil and honey, mix thoroughly
Place the baking tray under the grill, making sure there is a large gap between the tray and the grill so it doesn’t burn
Watch the mixture as it cooks and turn frequently to prevent burnt areas
Once it has a nice golden colour remove from oven and leave to cool
Serve atop some natural yoghurt or with milk. ENJOY!
