Quick Apricot Chicken
A sweet and salty sauce to accompany a simple chicken breast when you feel like something a little different. This is extremely quick and super tasty, the whole family will enjoy it.
1 medium non stick pan with lid
Shopping list for 2 people
2 large chicken breasts
2 tsp of mild curry powder
2 tbsp of sugar free apricot jam
1 tbsp of spreadable mild goats cheese
Splash of vege oil
Method to the madness
Heat the oil to a medium heat, dust the chicken breasts with the curry powder and add to the pan, cover with a lid
Turn the chicken half way through the cooking process to ensure even cooking
Once cooked remove the lid, add in the apricot jam, coat the breasts in the jam and cook until you see some caramelisation
Turn the heat off, add the goats cheese and let it melt around the breasts
Serve alongside your fav low carb side, I used steamed tender-stem broccoli. ENJOY!
