Courgette, Pea & Mint Soup

If you are after a delish summer soup then look no further. Soups tick all boxes, quick, easy, affordable and most importantly, tasty. Don’t be put off if you or your kids don’t normally like courgettes, they have a very subtle flavour in this soup and are unrecognisable once blended.

Equipment required

1 hand blender or blender
1 medium deep base saucepan

Shopping list 2 people as a main 4 as a starter

1 onion
2 small cloves of garlic
2 medium courgettes
1 cup of shelled peas, fresh or frozen
Small bunch of fresh mint
1 vege or chicken stock cube
1/2 tsp of ground cumin
Splash of vege oil
Boiling water
2 tsp of fresh goats cheese (optional)

Method to the madness

Heat the pan with the oil to a medium heat

Dice the onion and garlic, add to the pan

Slice the courgette lengthways and then into pieces about 1cm big

Once the onion has softened slightly add in the cumin, mixing it well through the onion

After about 30 seconds add the courgette, peas, stock cube and enough water to just cover the veges

Leave this to boil for about 5-7 mins until the veges are tender

Once the veges are tender turn the heat off, chop the mint roughly and add to the mixture, taste for seasoning

Blend the soup to your desired consistency

Serve topped with a tsp of fresh goats cheese per bowl and some fresh mint (optional). ENJOY!
