Caper Mayonnaise

When you are looking for something a little different to plain mayo, add flavour with delicious capers. Capers are salty little suckers and lift the mayo to a new level. Pictured here with steak, celeriac chips and caper butter, it was the perfect accompaniment.

Equipment required

1 mixing bowl
1 whisk or electric whisk, food processor can be used for a bigger quantity

Shopping list generous quantity for 2 people

1 egg yolk
1 tsp of dijon mustard
100ml of vege or sunflower oil
1 tsp of capers roughly chopped
Squeeze of lemon
Pinch of salt
Crack of pepper

Method to the madness

Separate the yolk and add to the mixing bowl with the mustard, whisk until it thickens slightly and is creamy looking

Slowly add the oil in bit by bit whisking constantly, make sure to whisk the oil in completely before adding more to avoid it splitting. If you are using a food processor you can add a steady slow steam of oil while the machine is on

Once the oil is incorporated roughly chop the capers and mix through

Squeeze in the lemon, mix thoroughly and taste for seasoning

Add desired seasoning, refrigerate until serving. ENJOY!
