Cauliflower Cheese


Cauliflower Cheese

A traditional delight that reminds me of roast dinners as a child. This version uses cornflour instead of the usual white flour so it is gluten free. Excellent side dish to meat or poultry, or just as a snack on its own.

Equipment required

1 small baking dish
1 small deep base saucepan
1 medium deep base saucepan

Shopping list for 2 people

1 small head of cauliflower
1 knob of butter
1 tsp of cornflour
1 cup of low fat milk
1/2 cup of your fav grated hard cheese (i used gruyere) plus some extra for the top

Method to the madness

Pre heat the oven to 200 degrees

Boil some water and add to the large deep base saucepan with some salt

Chop the cauliflower into florets and add to the boiling water, cook until tender

In the mean time add the butter to the small saucepan and melt n a medium heat. Stir in the cornflour, cooking it for approx 2 mins, stirring continuously

Keep stirring and add the milk a little at a time until it is all incorporated

Once the sauce has thickened and all the milk is incorporated turn the heat off

Add in 1/2 cup of grated cheese and stir in until melted, taste for seasoning

Drain the cooked cauliflower and place into the baking dish

Pour over the cheese sauce and add some extra cheese to the top

Bake in the oven for approx 30mins until the top is golden and the sauce is bubbling

Serve along side any roast, meats or poultry. ENJOY!
