How can you beat a good old fry up? The weather in England has been decidedly miserable the last few weeks, cravings for a fresh fruit summer salad are squashed by the constant down pour. I know this isn’t really a recipe, it’s more of an idea for those of you who are sick of the norm.
2 non stick fry pans
Shopping list for 2 people
2 – 4 eggs
4 slices of smoked streaky bacon
4 large field mushrooms
100g of haloumi
Chilli infused olive oil
PInch of Salt
Method to the madness
Peel and slice the mushrooms, I like quite a thick slice as they tend to shrink in size
Heat one of the pans to a high temp, add a small amount of chilli oil to the pan, once it’s hot add the mushrooms
Heat the other pan and fry the bacon until crisp, drain on kitchen towel, and keep warm in the oven
Cook the eggs and haloumi in the fat left over from the bacon
Make sure you keep an eye on the mushrooms, once golden add a pinch of sea salt and the thyme
Serve up with a low carb tortilla wrap, or just on it’s own. ENJOY!
