Mexican Inspired Beef Wraps

I say this is Mexican inspired because I haven’t used traditional Mexican ingredients. However, the end result conjures up memories of Mexican food with all the warmth and complexity it offers our taste buds. The beef can be wrapped up in lettuce if you don’t have any low carb wraps or eaten in a salad.

Equipment required

1 medium mixing bowl
1 lrg non stick fry pan

Shopping list for 2 people

Beef Marinade
300g of quick cook steak chopped
2 tbsp of balsamic vinegar
1/2 juice of lime
1 tsp of ground cumin
Pinch of salt
Small bunch of chopped coriander
1 heaped teaspoon of Sambel Olek or chilli paste
1 tbsp of sunflower oil

4-6 low carb wraps or gluten free
Fresh lettuce
Grated cheese, your fav
Your choice of sides, I used Creamy Corn and Fresh Tomato Salsa

Method to the madness

Place all the ingredients in a bowl with the beef and mix well, let this marinate for at least 1 hr

Turn the pan to a medium – hot heat, add the beef and cook it to your liking, I like mine medium so cook it for about 4 minutes in total

Once the beef is ready set to the side, warm your wraps either in the microwave or in another non stick pan

Serve topped with beef, cheese, lettuce and your sides, Guacamole and sour cream are also good options. Wrap up and eat while warm. ENJOY!
