Creamy Corn

I wanted something creamy to top my Mexican inspired wrap, when searching through the cupboards I spotted a lonely tin of corn… Perfect. This is a quick and easy way to add sweetness to a salad wrap or Mexican dish. You could also use it as a dip with vege crudités.

Equipment required

1 hand blender, chopping attachment
Or food processor

Shopping list

140g tin of corn kernels
1/2 small white onion
1 tbsp light mayonnaise
Squeeze of lime juice
Pinch of salt

Method to the madness

Simply blitz the onion and corn in the processor, stir in the mayonnaise and a squeeze of lime. Taste for seasoning and serve. ENJOY!
