Sage Pork Chop

There is nothing more tasty than a chunky, moist, flavoursome pork chop. With the addition of a simple seasoning and some delish sides a satisfying meal is only 15 minutes away. I served mine with Creamed Spinach and Celeriac Mash, 2 excellent accompaniments.

Equipment required

1 lrg fry pan with lid

Shopping list for 2 people

2 lrg pork chops
Approx 3 tbsp of cornflour
A shake of dried sage
Salt & Pepper
Splash of sunflower oil

Method to the madness

Take the pork chops out of the fridge well ahead of cooking so they are at room temperature

Grind up the dried sage with the back of your spoon or mortar and pestle

You can simply use a plate to mix up the coating or a plastic bag. Tip the ground sage into the cornflour, season generously

Coat the pork chops with the cornflour mix, shake off the excess

Put the oil in the pan and heat to a medium high heat

Once the pan is hot place the pork chops in and put the lid on immediately

Turn the pork chops every 2-3 minutes for between 10-15 minutes depending on the size of the chops. Serve with your fav low carb sides. ENJOY!
