I have written about the joys of celeriac before. It is an excellent lower carb alternative to the common spud. The mash is subtly sweet, with a slight earthiness that is so pleasing and comforting. It can be served as a side to pretty much anything, I am sure it will not disappoint.
1 lrg deep base saucepan
1 hand blender
Shopping list for 4 people as a side
1 lrg celeriac
2 slices of lemon
1/4 cup of low fat cream
Method to the madness
Peel the celeriac with a knife and roughly chop
Bring salted water to the boil, add the lemons and celeriac
Cook for about 15 mins until the knife can easily pierce the pieces
Drain the celeriac and remove the lemon
Blend with the cream and taste for seasoning
Serve along side your fav high protein dishes, a nice steak, chicken or fish. ENJOY!
