Aubergine ‘Cake’

A scrummy vege recipe that brings back memories of Greece. Using feta and olives gives the dish a different spin on the classic Italian aubergine dishes. The recipe is very easy to make, an excellent main or starter for a vege or a delish side dish to beef or lamb.

Equipment required

1 lrg non stick fry pan
1 small deep base saucepan
1 springform tin, approx 18cm
Aluminium foil

Shopping list for 4 people as a side or starter, 2 as a main

2 medium – large aubergines
1 onion
1 clove of garlic
1 tin of chopped tomatoes
Sprinkle of dried rosemary
Sprinkle of salt
10 green olives, pits removed
50g of feta
Sprinkle of grated Parmesan
Olive oil

Method to the madness

Heat the oven to 200 degrees

Top and tail the aubergines and then slice lengthways, about 1cm thick

Roughly dice the onion and garlic, heat the saucepan to a medium heat, add a small amount of olive oil and the onion to the pan, once the onion has some colour add the garlic

Add the chopped tomatoes, seasoning and rosemary, simmer on a medium heat stirring occasionally while you continue with the recipe

Heat the fry pan to a medium – high heat

Brush the slices of aubergine with olive oil, cook the slices until golden on both sides, you will have to do this in batches, once cooked set to the side

Once the liquid has been reduced in the tomato sauce you should have a thick chunky consistency, turn the heat off. Chop the olives and the feta roughly and add to the sauce

Line the springform tin base with aluminium foil

Lay the first layer of aubergine onto the base of the springform tin, add some of the tomato sauce, repeat this process finishing with aubergine

Top the aubergine with a sprinkle of Parmesan and put into the oven for 15-20 minutes until golden

Serve with your fav low carb side or as a side. ENJOY!
