Cauliflower Fritters

I don’t have much to say about these except, YUM! A great vege treat full of yummy spices that warm your insides. You could make these any size you want depending on when you are going to serve them. I made big ones for dinner, you could make little ones for a tasty vege canapĂ©. I served mine with some Aubergine Puree and Greek Yoghurt mixed with lemon, but you can serve with any sauce you desire.

Equipment required

1 lrg fry pan
1 lrg deep base saucepan
Mixing bowl

Shopping list makes approx 12 large fritters

Approx 600g of cauliflower
1 onion or 6 small spring onions
4 eggs
2 tbsp of GF flour
2 tsp of salt, plus more for cooking the cauliflower
1 tbsp of mild curry powder
1 tsp of group cumin and cardamom
Sunflower oil for cooking

Method to the madness

Boil water in a kettle

Chop the cauliflower and add to the deep base saucepan, turn to a high heat and pour over boiling water, add some salt to the water

Mix the spices, salt, eggs and flour thoroughly to form a batter

Once the cauliflower is cooked drain, break up any large pieces and mash slightly with a fork, set aside to cool a little

Finely dice the onion or spring onions, add to the batter

Add in the cauliflower and mix

Turn the fry pan to a medium to high heat, add a thin layer of sunflower oil, once the oil is hot enough add about 2 tbsp of the mixture for large fritters

Cook the fritters for 3-4 mins each side until golden, remove from pan and drain on kitchen towel

Serve with your fav low carb sauces. ENJOY!
