A delish accompaniment to meat or vege dishes. The puree has a strong garlicky taste with a subtle smokey flavour. You could follow the same recipe without the blending to make a yummy dip.
1 hand blender, chopper attachment
1 lrg aubergine
1 clove of garlic crushed
1 tsp of cumin
1 tbsp of olive oil
Squeeze of lemon
Sprinkle of salt
Method to the madness
Wash the aubergine and place under an extremely hot grill in the oven, cook under the grill turning occasionally for about 30 minutes
Once the aubergine is soft and cooked inside place on a chopping board and cut through the skin
Scoop out the insides and place in the chopper with the other ingredients
Blend until smooth. ENJOY!
