Mushroom ‘Cream’ Sauce

A delightful sauce that is packed full of flavour but low on fat. It is simple to make and I promise you wont miss the cream. You can use this tasty sauce to top any meat or poultry, I served it over some pork loin chops, yumbo.

Equipment required

1 lrg non stick pan

Shopping listfor 2 people

250g of mushrooms
Sprinkle of dried thyme
1/2 chicken stock cube
1 clove of crushed garlic
1 cup of low fat milk
1 tsp of cornflour
Tiny bit of water

Method to the madness

Slice the mushrooms to desired width, turn the pan to high, once hot add the mushrooms, be careful not to overcrowd the pan or they will stew. You may have to cook half, then add the other half

Once the mushrooms have a nice colour, put the crushed garlic in, mix for 30 secs

Add in the milk, stock cube and thyme, bring to the boil

Mix the cornflower with a small amount of water to dissolve it and add it to the mixture, stir frequently

Turn the pan to a medium heat and let mixture simmer away until you get your desired consistency. It will not be as thick as a cream sauce, but just as yummy. Serve with your favourite meat or non starchy veges. ENJOY!
