Dukan Dinner, Day 3, Asian Chicken Meatballs

These are tasty little morsels, very easy and quick to make. They have a nice kick and are delish as a main or snack.

Equipment required

1 non stick fry pan with lid
1 hand blender, chopping attachment
1 mixing bowl

Shopping list makes approx 13 meatballs

300g of lean chicken mince, no more than 10% fat
1 onion
1.5 tsp of hot Dijon mustard
1 tsp of ground coriander
2 tbsp of soy sauce
1.5 tbsp of oat bran
Squeeze of wasabi paste

Method to the madness

Process the onion so it’s in a fine dice

Mix the mustard, 1 tbsp of soy and coriander together

Break up the mince, add the sauce and the onion, mix throughly

Mix in the oat bran and shape into balls, about 1 heaped tbsp. The mixture will be sticky so wet your hands first when you are shaping them

Heat the pan to a high heat and brown the meatballs on all sides

Turn the heat to medium once browned and put on the lid, cook for a further 10mins

Once cooked turn the heat back to high, mix the remaining soy and wasabi together and pour over the meatballs to form a glaze. ENJOY!
