Spicy Sweet Potato Soup

Sweet Potatoes are not in the low starch category but they have recently be shown as one of the best sources of beta carotene which according to Dr George Obikoya, helps night blindness, other eye problems, skin disorders, enhances immunity, protects against toxins and cancer formations, colds, flu and infection. To enhance absorption of beta carotene you should add fat to the meal.. Um no problem there. So here’s a sweet and spicy recipe perfect as a dinner party starter or yummy lunch. This soup takes only minutes to prepare and no time to cook. No excuses not to try it.

Equipment required

1 hand blender, stick blender attachment
1 lrg deep base saucepan with lid

Shopping list for 4 people

550g of sweet potatoes
1 lrg onion
1 knob of butter
1 chicken stock cube, leave out if using stock
750ml of water or chicken stock
1 tsp of nutmeg
1/2 tsp of cayenne chilli powder
Juice of half a lime
Chorizo slices (optional)

Method to the madness

Peel and chop the sweet potato and onion into rough pieces. Heat the pan to medium high and add the butter and onion

Once the onion has slightly browned add the sweet potato, nutmeg and chilli, cook for 1-2 minutes

Add the water and stock cube, place the lid on and bring to the boil, leave it boiling for about 20 minutes

Once the sweet potatoes are soft, blend the soup until smooth

Taste the soup for seasoning once blended, add half the lime juice, mix and taste, add more if desired

If you are using chorizo fry it off and serve in slices on top of the soup or in a small diced mixed in. ENJOY!
