Beef Stroganoff

Who doesn’t love beef stroganoff! Such a treat, the thought of the gooey rich sauce makes my mouth tingle. This recipe is simply delish, quick and easy. As I’m cooking it quickly it calls for beef that suits the process, I was lucky enough to find some fillet on special but you can use what suits your budget.

Equipment required

1 lrg non stick fry pan

Shopping list for 4 people

400g of fillet steak cut into strips
300g of portobello mushrooms
1 onion
2 tbsp of tomato paste
1 chicken stock cube
125mls of water
2 tbsp of Worcestershire sauce
2 tbsp of low fat sour cream
Squeeze of lemon (optional)

Method to the madness

Get the pan really hot, brown the meat on all sides, remove from pan

Cut the onion into wedges and the mushroom into slices. Fry off the onion and mushroom until they have some colour

Clear a spot in the pan and cook off the tomato paste for 1 minute, once cooked mix through the veges

Add the stock cube, water and worcestershire sauce to the pan, reduce the sauce slightly, make sure the mushrooms are cooked then re add the beef

Turn the heat to low and add the sour cream, stir thoroughly. Add the lemon juice here if desired. Serve the strog with your fav low carb side, I recommend green beans and broccoli or low carb buttered pasta. ENJOY!
