Beanie Burgers

With a net carb count of about 15g/100g and a high protein content beans are a tasty treat. These beanie burgers are cheap to make, quick and easy. Great for lunch or dinner served with a salad or as a snack in between meals. Mix up the flavourings to suit your palette and try them out on the kids, they are sure to love them.

Equipment required

1 hand blender, chopping attachment
1 mixing bowl
1 fry pan

Shopping list makes approx 4 burgers

400g tin of white beans, I used cannellini beans
1 sml red onion
100g of mushrooms
1/2 crumbled vege stock cube
1 tsp of ground cumin
1/2 tsp of garlic powder
1 egg
1 tbsp of cornflour
Splash of vege oil

Method to the madness

Blend the onion and mushrooms to a very fine dice

Drain the beans and add to the bowl with the rest of the ingredients, minus the oil, mix well squashing a few of the beans, the mixture is very sloppy, don’t worry they will work

Heat the oil in the fry pan on a medium-high heat

Add approx 2 tbsp of the mixture per burger and cook for 2-3mins each side. Make sure you leave it to cook long enough on the first side so it doesn’t fall apart when you turn it

Serve with a salad or your fav low carb side. ENJOY!
