Basil Marinated Chicken Brochettes

This punchy marinade gives the chicken a lovely flavour that reminds me of summer. With very little oil used and lots of veges it’s a low fat dish that’s is easy and family friendly. Use whatever non starchy vegetables you want on the skewers to match your own palette. The marinade will complement any vege or meat combo.

Equipment needed

6 large skewers, soaked in water
1 non stick fry/griddle pan or BBQ
1 hand blender, chopping attachment

Shopping list for 2 people

2 lrg chicken breasts
1 courgette
1 bulb of fennel
1 red onion
4 medium sized mushrooms
1 handful of fresh basil
2 minced garlic cloves
2 tbsp of olive oil
Juice of 1/2 a lemon

Method to the madness

Soak the skewers in water, I used 6

Throw the basil, oil a pinch of salt and garlic into the blender and blend until it the basil leaves have broken down. Add half of the lemon juice, mix and taste, add more if required

Cube the chicken in pieces about 2 cm big, cover the chicken with all but 2 tsp or so of marinade, leave it in the fridge for minimum 1 hr

Chop the vegetables into the desired size. I cut the fennel and onion into small wedges, the courgette into quarters and then slices about 1cm big and the mushrooms into quarters

Once the chicken has marinated thread onto the skewers with the vegetables in whatever pattern you like. I mixed them up so no 2 skewers were the same

Once the skewers are assembled, take the left over veges and throw them into a hot pan with a splash of olive oil and seasoning to cook. Once cooked remove them from the pan, turn your pan to a medium-high heat, grill the skewers on each side for about 1-2 minutes

Serve the skewers, topped with the remaining marinade, alongside the other veges and your fav low carb side, I served it with homemade coleslaw. ENJOY!
