This is a very simple dish that is perfect served warm or cold. The vege’s add a lovely sweetness to the mix and it is perfect served up with a simple side salad. You can throw whatever non starchy veg you like in there, get creative.
18cm non stick spring form tin
Shopping List for 4 people with a big side, 2 with a small salad
6 lrg eggs
1 small red pepper
1 small onion
1 crumbled stock cube, vege or chicken
1 cup of grated cheddar or your fav hard cheese
Method to the madness
Preheat the oven to 180 degrees
Grate the courgettes, squeeze out any excess liquid by wrapping it in paper towel and scrunching
Finely dice the onion and pepper, add this to the courgette in the mixing bowl
Whisk the eggs in a separate bowl with the crumbled stock cube and ground pepper
Combine all the ingredients, add the cheese and stir thoroughly
Line the bottom of the spring form tin with baking paper and grease the edges
Pour out the mixture, bake for approx 1hr until a skewer can be removed cleanly. Let the mixture rest for a few minutes before removing it from the pan. Serve with your fav side or simple salad. ENJOY!
