Warm Cheesy Sweetcorn Dip
This dip will go down a treat every time, guaranteed. Great combo of sweet and savoury flavours, perfect with low carb tortilla chips or vege crudités. Pictured in the small bowl before the crudités here this is about 1/3rd of the mixture.
1 small non stick deep base saucepan
Shopping list makes enough for about 8 people
300g of light cream cheese
2 tbsp of light sour cream
1 tbsp of french onion packet soup mix
1 small onion
1 red chilli, deseeded if you want it mild
150g of tinned, frozen or fresh corn kernels
Sprinkle of fresh or dried dill
Method to the madness
Heat the pan to a medium heat, dice the onion and add to the pan, cooking for 1-2 minutes. If you are using fresh or frozen corn add it now to the pan and cook for a further 2-3 minutes
Add the cream cheese, dill, packet soup mix and chilli to the pan, turn to a low heat. Once the mixture has combined thoroughly, add the sweet corn if using tinned, stir in the sour cream and turn off the heat
Serve with your fav low carb dipping vehicles, I used red peppers, cucumber and carrots. ENJOY!
