Healthy Banana Bread

This recipe was recommend by a good friend, who is just as food crazy as me. Pictured on the right hand side here. I have adapted it slightly from the recipe found on a blog, The Healthy Foodie. This bread is extremely moreish, was simple to make and our little mite Lucy, who has a sweet tooth that could rival any, loved it. The best thing is, there is no added sugar. Not exactly low carb but as there aren’t any highly processed ingredients I think it is a winner. I love it!

Equipment required

1 non stick loaf tin
2 mixing bowls

Shopping list

2 cups of spelt or wholemeal flour
2 tsp of ground cinnamon
1 tsp of nutmeg and baking soda
1/2 tsp of baking powder
1/2 cup of chopped pecans, plus a few extra for garnish
1/2 cup of raisins

4 large bananas
1/2 cup of low fat milk
1/2 cup of unsweetened apple sauce
2 eggs
1 tsp of vanilla extract

Sprinkle of shredded coconut to garnish

Method to the madness

Preheat the oven to 180 degrees

Combine all the dry ingredients, minus the extra pecans and the coconut which is for the top, in one mixing bowl

In the other mixing bowl mash the bananas with a fork or potato masher, add the other wet ingredients and mix through

Add the wet ingredients into the dry ingredients and stir through until all is well combined

Pour the mixture into the loaf tin, sprinkle with the garnish of pecans and coconut, bake for around 50 – 60 mins until a skewer can be removed cleanly from the centre. Serve warm or cold with no added sugar peanut butter, light cream cheese or good old butter. ENJOY!
