Turkey Parma


Turkey Parma

This is comfort food without the fat. A take on the original chicken parmigiana, the rich flavours make you feel like you have had a real treat, but it is much less naughty then the deep fried escalope we are all used to. The turkey could be replaced with chicken or even pork, I guarantee this will be a hit with the whole family, you won’t even notice its low carb.

Equipment required

1 large non stick fry pan
1 small non stick deep base saucepan
1 large non stick baking tray

Shopping list for 2 people

2 large escalopes
1/2 cup of ground hazelnuts
1 or 2 egg yolks, depending on the size of your escalopes
1 large aubergine
2 or 4 slices of Parma ham or similar
1 tin of chopped tomatoes with basil, add fresh basil if you cannot find that
1 onion
2 cloves of garlic
Sprinkle of Parmesan
Olive oil
1 tbsp vege oil

Method to the madness

Pre heat the oven to 200 degrees

Thickly dice the onion, peel and smash the garlic, slice the aubergine into slices about 1cm thick, you will need about 4 slices. Brush the aubergine with a little olive oil and bake in the tray with the onion and garlic. Check on the veges after 10 mins, remove the onion and garlic if it is ready before the aubergine

While the veges are cooking prepare the escalope. Mix the egg yolk with some seasoning in a bowl, on a plate spread the ground hazelnut. Dip the escalopes into the egg yolk and then into the hazelnuts, shake off any excess

Once the veges are done, put the onion and garlic into the saucepan with the tomatoes. Simmer on a low heat while you finish the dish, stirring occasionally. Set the aubergines off to the side

Heat the fry pan to a medium heat with the vege oil. Cook the escalopes for 2-3 minutes each side, once cooked place in the same baking tray you used for the veges

Top the escalopes with the parma ham, 2 slices of aubergine and a sprinkle of parmesan. Place it in the oven to melt the parmesan. Taste the tomato sauce for seasoning

Once the cheese is melted remove from the oven and serve smothered in the tomato sauce. serve with your fav low carb side, I served with a simple salad. ENJOY!
