I made these for my lunch with the left over veges from last nights dinner, sweet corn and broccoli. You can have pretty much any combo of veges in these or meats like chicken, lamb, corned beef. They are quick and easy, can be eaten as a lunch meal or a simple snack.
1 medium non stick fry pan
Shopping list approx 6 fritters
Whatever leftovers you have
1 tbsp of self raising flour
Method to the madness
Heat up the fry pan on a medium heat with a small amount of vegetable oil
Simply mix all the ingredients together, spoon the mixture into the pan, approx 2 tbsp per fritter
Cook the fritters on both sides until golden. Serve with Chunky Tomato Sauce or Tangy Tzatziki. ENJOY!
