Incredibly simple and so versatile. I use this dip with anything I can think of. It’s an excellent way to add creaminess to a meal without the fat. It goes excellently with dishes that have a mediterranean feel. It can be used with crudités or if you are feeling naughty wholemeal pita bread or corn chips.
2 tbsp of low fat natural yoghurt
1tbsp of low fat creme fraiche
1 mini cucumber
A shake of dried oregano
A squeeze of lemon to taste
Salt & Pepper to taste
1 clove of finely minced garlic if desired
Method to the madness
If using it as a dip for crudités you will need to grate the cucumber, you may also want to strain the yoghurt if you want a thicker consistency, I never do. If using as an addition to a meal you can simply chop the cucumber into small chunks, then add all the ingredients to a bowl and mix. ENJOY!
