These are yummy little morsels of lamb goodness. They are subtly spiced, so if you like it with a bit more oomph, super charge the spices and double the quantities. These can be served by themselves or with your favourite sides. I had them with grilled courgette, aubergine, hummus and my version of tzatziki.
1 medium or large non stick fry pan
1 mixing bowl
Shopping list for 2 people as a main
400g lean lamb mince
2 tbsp of pine nuts
1tsp of ground cumin, cardamon, coriander, paprika
1/2 tsp of garlic powder, salt, white pepper
2 tsp tomato sauce
Method to the madness
Heat the pan to a medium heat, add the pine nuts and dry roast until coloured, set to the side
Put the mince and all other ingredients in a mixing bowl and mix throughly with your hands
Once the pine nuts have cooled add them and mix again
Shape your kofte into barrels, as big or small as you like, try to poke the pine nuts into the mixture so there aren’t a lot sticking out, as these will burn when cooking
Heat the fry pan you used for the pine nuts to a medium heat, add the kofte in batches so not to overcrowd the pan
Cook the kofte through, it will depend on the size of kofte you have made as to the cooking times, mine took about 10 minutes. ENJOY!
