Sesame, Tomato & White Bean Salad
The sun is shining at last in Old Blighty! Salads are the perfect snack, lunch or dinner when the sun is out, but they can get boring. If you are looking for a fibre hit, delish flavours and a nice crunch then this is the salad for you.
Equipment required
1 small non stick pan
1 mixing bowl
Shopping list 2 people as a main or 4 as a side
400g tin of white beans, your choice
175g of pomodorino tomatoes (or similar)
1 tbsp of sesame seeds
Small bunch of fresh thyme
Dressing
1 tbsp of chilli infused olive oil (or regular)
Squeeze of lemon juice
Good pinch of salt
Grind of black pepper
Method to the madness
Turn the pan to a medium-high heat and toast the sesame seeds until they have a nice golden colour
Mix up the ingredients for the dressing, being sure to taste for seasoning
Quarter the tomatoes and place in the mixing bowl
Drain the beans, wash them, place into the mixing bowl
Tear off some leaves of thyme and add to the salad along with the sesame seeds and dressing
Serve alongside scallops, a yummy piece of lamb, chicken or beef or with some fried haloumi. ENJOY!
